Sausage Egg Cheese Roll-Ups for Easy Breakfast

Sausage Egg Cheese Roll-Ups are what I make when everyone needs something warm but nobody has time to sit down. They bake up flaky on the outside, with soft egg, melted cheese, and a savory sausage link tucked inside.
The trick is to keep the eggs a little soft before they go into the dough. They finish in the oven without turning dry, and the cheese helps hold everything together when you bite in.
The Breakfast Filling Lineup
This recipe uses simple store-bought dough, so the filling needs to be well seasoned. Use fully cooked sausage links for speed, sliceable cheese for easy rolling, and eggs that are just barely set.
Ingredients

- Butter – Keeps the eggs soft and adds richness.

How to Make Sausage Egg Cheese Roll-Ups
1. Heat the Oven
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cheese and pastry from sticking.
2. Scramble the Eggs
Beat the eggs with milk, salt, and black pepper. Reserve 1 tablespoon of the beaten egg for brushing the roll-ups.
Melt the butter in a skillet over medium-low heat. Add the remaining egg mixture and cook gently until the eggs are softly set and still slightly glossy.
Remove them from the heat and let them cool for about a minute.
3. Build Each Roll-Up
Separate the crescent roll dough into 8 triangles.
Place half a cheese slice on the wide end of each triangle. Add a spoonful of scrambled eggs and one fully cooked sausage link.
4. Roll and Seal
Starting at the wide end, roll each triangle toward the pointed tip.
Place the roll-up on the prepared baking sheet with the point tucked underneath. This helps keep the dough sealed while baking.
5. Brush and Bake
Brush the tops with the reserved beaten egg. Sprinkle with chives if desired.
Bake for 15–18 minutes, or until the crescent dough is deep golden brown and completely cooked through.
Serve warm.
