Sausage Egg Cheese Roll-Ups for Easy Breakfast

Keep the Eggs Soft

The eggs are the one place this breakfast can go wrong.

Remove them from the skillet while they still look slightly glossy. They continue cooking inside the hot dough for another 15 minutes, so fully cooking them beforehand can result in dry eggs.

Small curds also roll better than large folds. Stir the eggs slowly over medium-low heat, then transfer them to a plate and let them cool briefly.

This also helps prevent excess steam from making the crescent dough soggy.

Do Not Overfill

A heaping spoonful of scrambled egg is enough for each roll-up.

If the filling spills out before baking, it is likely to spill even more once the roll-ups are in the oven. Keeping the filling modest also helps the center of the crescent dough bake properly.

Roll Them Tightly Enough

Crescent dough stretches easily, but it can tear if you force it.

Keep the dough cold until you are ready to assemble the roll-ups, then work with one triangle at a time.

Place the cheese down first. It creates a soft barrier between the egg and pastry while also helping hold the filling together.

Smart Ingredient Swaps

There are several easy ways to change these breakfast roll-ups:

  • American cheese – Creates a creamier, softer filling.
  • Pepper Jack – Adds a little heat.
  • Monterey Jack – Melts smoothly and has a mild flavor.
  • Swiss cheese – Adds a slightly nutty flavor.
  • Turkey sausage – A good alternative when using fully cooked links.
  • Cooked bacon – Can replace the sausage, although sausage fits the crescent dough more neatly.

For dipping, try ketchup, salsa, or maple mustard.

Food Safety Check

Use fully cooked sausage links, or cook raw sausage completely before assembling the roll-ups.

Raw sausage should not be placed inside the crescent dough and expected to cook safely during the short baking time.

Storage and Reheating

Allow the roll-ups to cool before storing them. Trapped steam can soften the pastry, especially when they are placed in a sealed container while still hot.

  • Refrigerator: Store in an airtight container for up to 3 days.
  • Freezer: Wrap individual roll-ups and freeze for up to 2 months.
  • Oven: Reheat at 325°F (165°C) until hot and crisp.
  • Air fryer: Reheat until warmed through and the pastry is crisp.
  • Microwave: Works when you’re in a hurry, but the pastry will be softer.

Make-Ahead Breakfast

For the best flaky crust, prepare the components the night before.

Scramble the eggs and cook any raw sausage ahead of time. Store them separately in the refrigerator.

In the morning, assemble the roll-ups and bake them fresh.
